THE MAN BEHIND THE STAMP

It started with a baker.
And a little love.

Hello, Uncle Tetsu.

Tetsushi Mizokami grew up in Hakata, Fukuoka, helping his parents in their cake shop. His later ventures included HANA JAM, which he opened with his wife, Kimiyo.

Our Japanese founder opened his first shop focused on Japanese cheesecake in 1990. It was a new chapter for a soft, light cake and the friendly face that would become its familiar stamp.

In March 2015, Uncle Tetsu opened in Toronto, its first shop in the West. Our Canadian bakeries carry that story forward, one little moment of joy at a time.

OUR PHILOSOPHY

The care is in the details.

The baking

From whipping egg whites to baking gently in a water bath, care creates the cheesecake’s light texture.

The welcome

A warm greeting. A familiar stamp. A little kindness to go with something delicious.

The sharing

For family, for friends, or a moment just for you. Good baking brings us a little closer.

Come share a little joy.
